Baked Zucchini


Here's another zucchini one for you.  This was a hit.  My kids are not huge lovers of zucchini, but when it multiplies like rabbits they just have put up with zucchini at every meal.  I loved that this was a all in one dish.  The flavor was wonderful and I just threw it together with ingredients I had at the house.

2-3 medium zucchini
1 pd ground beef
Seasoning salt, to taste
1 roma tomato, chopped
1 green bell pepper, sliced
2 small cans tomato sauce
1 c. Monterey Jack cheese

1.  Preheat oven to 350 degrees.  Wash your zucchini well and slice longways.  Using a spoon, carve out the center and lay in a 9x13 baking dish.  Like this:
2.  Cook your ground beef completely, breaking into small pieces.  Sprinkle in seasoning salt to your liking.  Spoon carefully into your hallowed out zucchini.  Sprinkle on tomatoes and peppers.  Pour tomato sauce over everything.  Cook for 1 hour.  Five minutes before serving, sprinkle on cheese and let melt.  Serve.
