Butterfinger Blondies

We are getting geared up for school to start.  We still have a week and a half till the kids go back.

Have you started all already?

I remember one of the things I loved about coming home from school was what would be ready for us to eat when we got there.  Since we lived so far out we usually rode the bus for an hour and we were starving by the time we walked in that door.

I remember my mom having so many yummy things just coming out of the oven.  Cookies, pull-aparts, warm bread, and so many other delicious things.

I get so excited for my kids to get home from school their first day and tell all about their day.  I have found that they are a lot more talkative when there is something yummy waiting for them (probably whey my mom had something for us--what a smart lady!), especially my son.

So I have been trying different recipes to decide what to make for them their first day.  Everyone in our house LOVES butterfingers so this was a natural choice.  These are amazing.  They are gooey, delicious, and perfect for a butterfinger lover.

Butterfinger Blondies with Butterfinger Buttercream Frosting


Blondies:
1 c. butter
1 c. light brown sugar
1/2 c. granulated sugar
2 tsp. vanilla
2 eggs
2 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. coarse sea salt
2 c. coarsely chopped Butterfinger Bars (about 5 full size candy bars)
Buttercream:
1/2 c. butter, softened
1/2 tsp. vanilla
1 T. cream (or more as needed)
2 1/2 - 3 c. powdered sugar
1/2 c. butterfingers, chopped (about 1 full size candy bar)

1.  Preheat oven to 350°.  Cream butter and sugars in a medium size mixing bowl.  Add the vanilla and eggs and mix until incorporated.  On low add your dry ingredients (flour, salt and baking soda) until just combined.  Stir in your chopped Butterfinger.  Spread in a greased 9×13 baking dish and bake for 25 minutes until center is JUST set.  Remove from oven and cool completely.

2.  To make the buttercream frosting, cream the butter.  Add in the vanilla, cream, and powdered sugar on low speed. Turn speed up to medium and mix until smooth.  Stir in your chopped Butterfinger.  Spread on your cooled blondies and Enjoy!
