Banoffee Pie

This year I had decided that I was going to post some pie recipes in honor of Pi day.  I made some delicious pies, took pictures of them, and then promptly forgot all about them.

Dang it!!

So instead of pie last week you will get pie this week.  Maybe next year I will actually remember.

You see, at my kids school Pi day is a huge deal.  And usually I am a total slacker mom and don't do anything to celebrate with them.

At school they have a contest to see you can recite the most numbers in Pi (a 5th grader won and she had memorized hundreds of numbers--all in order--and she went on for at least 10 minutes--crazy!!), throw "pie" at their teachers, play games, work out pi math problems, and many other cool things.

So in honor of Pi day and me completely forgetting about it, here is a delicious pie that we loved.  My kids thought it was crazy awesome and I enjoyed it too, but it was a little on the sweet side for me.

Banoffee Pie


1 9 inch chocolate cookie pie crust (like Oreo)
1 14-ounce can sweetened condensed milk
4 bananas
1 cup crushed chocolate-covered toffee bars or Heath bits
1 cup heavy whipping cream
1/4 cup powdered sugar
8 ounces cream cheese
1/4 cup brown sugar

Note:  The dulce de leche needs to be prepared about 10 hours ahead of time or the day before.

1.  Prepare dulce de leche according to these instructions. Make sure dulce de leche is cooled before proceeding with rest of pie recipe.

2.  Cut the bananas into 1/4″ slices and lay half of them in the bottom of pie crust. Then spread dulce de leche onto the bananas and up the sides of the cookie pie crust.  Lay the rest of the slices of banana over the dulce de leche. Sprinkle with 1/2 of the toffee bits and set aside.

3.  In a large bowl, combine the powdered sugar and heavy whipping cream. Beat with electric beaters until medium peaks form. In a medium bowl, beat the softened cream cheese and the brown sugar with the electric mixer until light and fluffy. Add the whipped cream and mix with the electric mixer until fluffy and combined. Gently spread over the toffee bits and then sprinkle with remaining toffee bits. Chill for several hours before serving. Enjoy!
