Tuna Boats

This is also called twice-baked potatoes, but it is definitely a favorite of our kids.

5 medium potatoes, scrubbed well
1 can tuna fish, drained
1 1/2 c. cheddar cheese
1 c. mayonnaise
2 t. salt
Sour cream/ranch, for topping

* Bake your potatoes until done.  Remove from oven and cut each lengthwise.  (keep oven on at 350 degrees) With spoon, gently remove the insides and put in a large bowl.  Try to keep the skin totally intact, like this:
 
* Once you have removed all the insides, add tuna fish, cheese, mayo and salt and stir well.  Spoon potato mixture back into the skins, heaping slightly.  Place on cookie sheet.  Cook for 30 minutes more and serve with sour cream and/or ranch.
