This is a fancier dessert but still very easy to make. I found it at i-am-baker and we all loved it. It didn't take me long to whip up and it tasted great, the chocolate really makes it.
1 1/2 c. flour
1 c. sugar
3/4 c. butter, softened
1 egg
1 T. cinnamon
1 c. whipping cream
Hot fundge or chocolate syrup
* Preheat oven to 375 degrees. In medium bowl combine flour, sugar, butter, egg and cinnamon. Using an electric mixer, mix until dough combines completely, may take up to 1-2 minutes, depending on how soft your butter is. Cover and refrigerate for 20 minutes.
* Spread parchment paper on a cookie sheet and spray with non-stick cooking spray. Take a tablespoon of dough, roll into a ball and flatten with your hand. Lay on cookie sheet, cookie should be thin. If you want perfect circles, spread half of dough on parchment paper, should be thin again. Cook for 7-9 minutes, watching carefully because they will burn easily. Remove from oven and transfer to cooling rack. If you spread the cookie dough over the bottom, use a circle cookie cutter and cut your circles while they are warm to prevent them from cracking.
* Whip your cream until stiff. Place one cookie on your plate. Add whipped cream, top with another cookie. Dizzle with hot fudge or chocolate syrup. Serve.
