Creamy Lemon Bars

 
This is a wonderful change from the normal lemon bars.  It is so creamy and delicious.  We took these to a BBQ and it was a huge hit with everyone.  Thanks Mom for the recipe.

Crust:
2 boxes lemon cake mix
2 eggs
1 c. oil
Filling:
3 8oz packages cream cheese (must be the real stuff), softened
1/2 c. lemon juice
1 egg
1/2 c. powdered sugar
1 c. white granulated sugar

*  Preheat oven to 350 degrees.  Mix cake mixes, 2 eggs, and oil until thoroughly combined, about 2 minutes.  Press 2/3 thirds of mixture into 10x15 cookie sheet or 2 9x13 pans.  Bake for 15 minutes.

*  While crust is baking, in large bowl mix cream cheese, lemon juice, egg, powdered sugar, and sugar until combined.  When crust is done, remove from oven and pour filling on top, spreading evenly.  Sprinkle the reserved crust mixture on top and bake for 15 more minutes.  

*  Cool for 1 hour on the counter and then refrigerate 2-3 hours before cutting and serving.
