YUMMY!!! Colleen made these for us and we loved them and I just had to have the recipe. I was amazed by how easy these were and so delicious. Hope you try them and thanks Colleen for sharing.
2 T. yeast
1 1/2 c. warm milk
1/2 c. sugar
1/2 c.vegetable oil
2 c. packed mashed potatoes (instant or the real thing works)
2 eggs
1 t. salt
6-8 c. flour
Glaze:
2 c. Powdered sugar
1/4 c.Milk
1 t. Maple flavoring (or vanilla)
* (this recipe is specifically designed for a Bosch, the amounts of flour may change depending on what mixer you are using) In your mixer add milk, sugar and yeast and let sit until bubbly. Then add potatoes, oil, eggs and salt and mix well. Add enough flour so dough is barely not sticky and then let it knead in your bosch for 10 minutes. Plop dough out on a floured surface and let raise until doubled, about 1/2 hour. Roll out on your floured surface, making it 1/2" thick. Cut in squares and seperate so each piece can raise for 20 minutes and not touch each other.
* While the the dough is raising for the last 20 minutes heat your oil. I use a large skillet with high sides so I can cook several at a time. The oil needs to be very hot, my skillet is on 400-425 degrees, before cooking donuts. Cook till light brown on each side and cool on cooling racks over paper towels. Glaze.
* To make glaze, whisk together powdered sugar ( I always sift my powdered sugar so you don't get any lumps), milk and maple flavoring.
