Wow this was yummy! The chicken is very moist and the grilled pineapple really makes this sandwich. It is a perfect addition to any BBQ or a great substitute for hamburgers. I found it here.
4 chicken breasts
1 bottle Teriyaki sauce
3/4 c. brown sugar
4 slices deli ham
1 can sliced pineapple (or fresh which we would be very tasty too)
4 slices pepperjack cheese
4 hamburger buns
* Pound chicken breasts until 1/4" thick (at least this thin). Place chicken breast in large ziploc bag. In medium bowl, mix teriyaki sauce and brown sugar until sugar dissolves. Pour 2/3 of sauce in bag with chicken, seal tightly and place in refrigerator for at least 4-5 hours. Separate the remaining mixture into 2 equal bowls (one for pineapple and one for chicken to prevent cross contamination) and refrigerate until ready to use.
* When ready to grill, open pineapple can, drain, reserving 1/4 c. juice. Place chicken and pineapple on the grill, over medium heat. Brush chicken and pineapple every few minutes with reserved sauce until done. Hint: Try to only flip chicken and pineapple once. In frying pan, cook ham with reserved pineapple juice until ham is hot. Toast hamburger buns. Place cooked chicken on bottom of each bun. Top with cheese, ham, grilled pineapple and top of bun. Serve immediately with remaining grilled pineapple.
