I've been thinking lately about some things. Mostly about women/mom things.
You see I want to be amazing. All too often I think that means amazing at every single thing. Amazing at cooking, parenting, cleaning, working, laundry, decorating, driving, exercising, and so many others.
I think so many other women think the same thing too. But too often we fall short in most of those categories and then we think we are not good at anything. We fail to see all the things we do well and only pay attention to all the things we don't do well.
It makes me sad. Mostly because I am guilty of it too. I want to be the super mom, the super wife, and the super woman. And it's super according to what we THINK others think we should be doing. But we shouldn't be comparing. We are all at different points so comparisons are so pointless, they just make you feel worse.
So this is to all those women that don't think they are very super. You are. I promise. Remember to focus on all the super things you do and stop paying attention to all the super things you don't do. You are amazing right now.
And this cookie is for you. An amazing, super yummy cookie that screams "you are enough".
Nutella Kiss Cookies
1/2 cup butter flavored shortening (not butter or margarine)
1/2 cup Nutella
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 tsp baking powder
1/4 tsp baking soda
1 egg
2 tbsp milk
1 tsp vanilla
1 3/4 cup all purpose flour
1/4 cup granulated sugar for rolling
36 Hershey Kisses, unwrapped
1. Preheat oven to 350°F. Line cookie sheets with parchment paper or silpat liners. Set aside.
2. In a large mixing bowl, beat shortening and nutella till smooth. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until completely incorporated. Add egg, milk, and vanilla and mix well again. Slowly add flour and mix until no dry streaks remain.
3. Scoop out rounded tablespoons (I use a small scoop so all the cookies are uniform in size) and roll them into balls. Roll the balls in the 1/4 cup of granulated sugar and place on prepared cookie sheets, 2 inches apart. Bake until edges are set, about 8-10 minutes.
4. As soon as you remove cookies from oven, press kisses into the center of each cookie. Let cool completely on wire rack. Enjoy!
