Chocolate Waffles, what more needs to be said?
Okay so I will say some more, but really they speak for themselves. They were absolutely yummy with just a hint of chocolate! My kids were so excited because when else do they get chocolate in the morning. We served these when we had some family spend the night and they were a hit. They would be really good with any fruit that's in season so experiment and try it with different combinations.
1½ c. flour
3 T. sugar
½ c. cocoa powder
1 t. baking powder
1 t. salt
½ t. baking soda
3 eggs, beaten
1/4 c. butter, melted and slightly cooled
1 t. vanilla
2 c. buttermilk, at room temperature
¾ c. mini chocolate chips
1. Preheat the waffle maker according to the manufacturer’s instructions. Preheat the oven to 200˚ F.
In a medium mixing bowl, combine the flour, sugar, cocoa powder, baking powder, salt and baking soda. Whisk to blend. In another bowl combine the eggs, butter, vanilla and buttermilk. Whisk to blend well. Mix the wet ingredients into the dry ingredients just until incorporated. Let the batter rest for 5 minutes.
2. Fill the waffle iron with batter and sprinkle with 1 T. of chocolate chips. Cook until the waffle is crisp and completely cooked. Transfer finished waffles to the preheated oven and repeat until all the batter has been used. Serve immediately with fresh berries and whipped cream. Enjoy!
