Pumpkin Cookies


Fall comes around and pumpkin becomes a favorite at our house.  These cookies are moist and so yummy with their frosting.

1 c. sugar
1 c. brown sugar
1 c. shortening
1 1/2 c. pumpkin
2 eggs
3 c. flour
1 t. baking soda
1 t. cinnamon
1 t. nutmeg
1/2 t. ginger
1/2 t. ground cloves
1/2 t. salt

* Preheat oven to 375 degrees.  Mix sugar, brown sugar and shortening.  Add eggs and pumpkin and mix well.  In seperate bowl, mix dry ingredients and add, stirring well.  Drop by tablespoon or using medium scoop on greased cookie sheet.  Bake for 10-12 minutes.  Remove to rack and let cool completely.  Cover with cream cheese frosting.
