1 10-inch pie shell, baked
1 1/2 c. half-n-half
1 1/2 c. coconut milk
2 eggs
3/4 c. sugar
1/3 c. cornstarch
1/4 t. salt
1 c. flaked coconut, toasted
1 t. vanilla or coconut extract
Topping:
1 c. whipping cream
1/4 c. powdered sugar
1 t. vanilla or coconut extract
* In medium saucepan, combine half-n-half, coconut milk, eggs, sugar, cornstarch and salt. Bring to a boil over medium-low heat, whisking constantly (can also use a double broiler). When it starts to thicken to the consistency of a pudding, about 15-20 minutes, remove from heat and stir in 3/4 c. toasted coconut and coconut/vanilla extract. Pour into pie shell and chill 2-4 hours or until firm.
* Before serving, whip whip cream, powdered sugar and vanilla/coconut together. Spread on pie and top with remaining toasted coconut. Serve.
