Pumpkin Oatmeal Cookies

These are some of the best cookies I have ever had.  I could easily eat a plateful.  They have a wonderful flavor and perfect for fall.  This recipe is comes from Erica and Emily, thanks ladies!

1-15 oz Krusteaz Pumpkin Spice Quick Bread
1/2 c. butter, softened
1 egg
1 c. quick-cooking oats
1/2 c. sugar
1 t. cinnamon
1/4 t. nutmeg
3 T. water
1 c. chocolate chips
sugar

* Preheat oven to 375 degrees.  Using an electric mixer, mix on medium speed quick bread and butter for 1 minute.  Add egg, oats, sugar, cinnamon, nutmeg and water.  Continue mixing until dough forms.  Stir in chocolate chips.  Roll dough into balls, about a tablespoon at a time, roll in sugar.  Place 2 inches apart on un-greased baking sheet.  Bake 11-13 minutes.  Enjoy!!

Oh my goodness...these have to be the best cookie ever!! I would describe it as a hybrid pumpkin spice and oatmeal. I made them with my nanny kid on a rainy day to trying keep occupied. I was baking with what they had in the house...no baking powder or soda. I added dried cranberries instead of chocolate chips and I think it was a great choice. Thank you for this wonderful recipe that will be added to my list of cookies to make in the future
