Crepes

For the next week I will be featuring some recipes that you can use for Valentine's Day.  We have crepes every Valentine's Day and my kids look so forward to it, when else do they get something not good for them but absolutely yummy for breakfast?  This recipe makes quite a bit and works great cut in half.

Crepes:
6 eggs
4 c. milk
3 c. flour
1 t. allspice
1 t. salt
Filling:
1 8oz cream cheese
1/2 c. butter
1/4 c. sugar
1 1/2 t. vanilla
Fruit
Whipped cream

* Beat together eggs, milk, flour, allspice and salt until smooth.  Heat 8 inch frying pan on medium heat, spray with non-stick cooking spray and add 1/3 c. batter.  Tilt pan until batter covers bottom, it will be thin.  When light brown and holes form in the top (you know like regular pancakes) flip over and brown other side, this shouldn't take long, 1-2 minutes.  Continue until all is done.

* In small saucepan, combine cream cheese, butter, sugar and vanilla over medium heat.  Whisk until creamy and smooth.  In each crepe, fill with cream cheese filling and your favorite fruit (strawberries, raspberries, blueberries, etc).  Roll up and top with whipped cream.
