Guacamole Bruschetta

Mmm!  We love avocados so when I found this on Blog Chef I knew I needed to try it.  It turned out very yummy and would be perfect for an appetizer or summer party (I know, I know it's a little early for that but the sun is out and we have reached 50 degrees).  We added the cheese but feel free to skip that step.

1 loaf french bread, sliced into 1/2" pieces
1 c. fresh parmesan chees
1 t. minced garlic
2 T. olive oil
2 roma tomatoes, chopped
2 avocados, chopped
1/3 c. onion, finely chopped
1/4 c. cilantro, finely chopped
2 T. lime juice
1/2 t. kosher salt
1/4 t. pepper

* Preheat oven to 400 degrees.  Arrange french bread slices on cookie sheet.  Toast for 3 minutes on one side.  Remove from oven, flip over and brush each slice with olive oil.  Sprinkle about 1 T. cheese on each slice and put back in oven for another 3 minutes.  Set aside.

*  In large bowl combine garlic, tomatoes, avocados, onion, cilantro, lime juice, salt and pepper.  Mix well.  Place about 2 T. of avacado mixture on each piece of toast and serve.
