A fun favorite for the kids. I found it in the Taste of Home magazine and the kids take turns picking what we put in it, which they love.
1 c. butter, softened
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 t. vanilla
2 c. flour
1 t. baking soda
1/2 t. salt
1 c. quick cooking oats
1/2 c. flaked coconut
1 c. candy (m&m's. reese's pieces, chocolate chips, butterscotch chips, etc.)
* Preheat oven to 375 degrees. In large bowl cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, salt and baking soda. Gradually add to creamed butter mixture and mix well. Beat in oats, coconut and candy.
* Using your medium scoop, or roll into 1 inch balls, place 2-in. apart on ungreased cookie sheet, flattening slightly. Bake for 9-11 minutes or until lightly browned. Remove to wire racks and cool.
