This recipe comes from my mother-in-law. Thanks Laura for sharing it. We are a homemade breakfast kind of people. We have cold-cereal maybe once a week, so pancakes are one of our staples. We never buy the pancake mixes either, mostly because my mom never did so it doesn't occur to me to do it either. Most people have the ingredients on hand so go ahead give this homemade version a try. My kids prefer whole wheat pancakes and this one tastes so yummy with the applesauce and the honey.
1 1/2 c. wheat flour
1 T. baking powder
1/2 t. salt
1/4 c. honey
1/4 c. applesauce
2 eggs
1 1/2 c. milk
* In medium bowl mix flour, baking powder and salt. In large bowl, beat eggs for 1 minute. Whisk in honey, applesauce and milk. Add dry ingredients and whisk together until mixture is barely wet and all dry ingredients are incorporated. Heat griddle. Pour 1/2 c. pancake mixture on griddle for each pancake and cook till bubbly. Flip and cook until done. Serve with your favorite syrup or try this one.
