Sourcream Apple Bars

Mmmm, fresh apples.  This was delicious and reminded me a lot of apple crisp.  The best part is that it has a crunchy crust that blends beautifully with the apples.  Add some ice cream and it is a perfect dessert.  Plus, it has apples in it so you can pretend like it's healthy!  This dessert is best if you eat it while it's still warm, although for leftovers we threw it in the toaster oven and it was still fabulous.  I found the recipe here

Crust:
1 c. butter, softened
1 c. firmly packed brown sugar
2 c. uncooked quick cooking oats
1 c. flour
1 c. chopped pecans  (I didn't have any in the house so I left these out and it turned out fine)
1 t. baking soda
1 t. ground cinnamon
1/4 t. allspice
Filling:
1 c. sour cream
3/4 c. sugar
2 T. flour
1 egg
2 medium (about 2 cups) apples, unpeeled, shredded 

1.  Heat oven to 350 degrees.  Combine butter and brown sugar in large bowl.  Beat at medium speed until creamy.  Add  remaining crust ingredients and beat until well mixed.

2. Press HALF of crust mixture onto bottom of ungreased 13 x 9 pan.  Bake for 8-10 minutes or until light golden brown.

3. While crust is baking combine the filling ingredients; mix well.  Gently pour the filling over the hot, partially baked crust.  Crumble the remaining crust mixture over the top of the fill and press down lightly.

4.  Bake for an additional 25-30 minutes or until the top is golden brown and the center is set.  Cool.  Cut into bars.  Store refrigerated.  (We ate these warm and I preferred them that way).
