Peanut Butter Oreo Muddy Buddies

The other day on Facebook I ask what kind of Oreo I should use in the new recipe I was making.

The top votes were for mint and peanut butter. Mmmm so delicious!! I love both of them but as I was browsing through the store I decided on the peanut butter Oreos especially after I "found" the peanut butter M&Ms. 

Maybe I should say they "found" me. Seriously, I "heart" those little things so much.  

Well this was a hit. Everyone at this house was in love. The combination of peanut butter and chocolate is the ultimate for me so adding even more chocolate and even more peanut butter seemed like the most natural thing in the world.

Heaven. Heaven. Heaven.

Peanut Butter Oreo Muddy Buddies

9 cups Chex cereal (rice, corn or chocolate)
1 cup peanut butter M&Ms, chopped coarsely
1/4 cup butter
1 cup semisweet chocolate chips
1/2 cup creamy peanut butter
1 tsp vanilla
10 peanut butter Oreos
1 cup powdered sugar

1. Mix cereal and peanut butter M&Ms in large bowl and set aside. In medium microwave safe bowl combine butter, chocolate chips, and peanut butter. Microwave in 30 second increments until everything is melted and smooth. Stir in vanilla. Set aside.

2. Crush Oreos in your food processor (I like to have them crushed fine which is why I use my food processor but you can also crush them in a ziploc bag to the consistency you prefer). In a large ziploc bag add Oreo crumbs and powdered sugar. Mix well.

3. Pour chocolate over cereal and M&Ms. Stir until completely covered. Pour into ziploc bag and shake until cereal is coated with powdered sugar mixture. Pour onto large rimmed cookie sheet and let set 5 minutes to let chocolate set completely. Eat and enjoy!

Chocolate Caramel Crunch

 I love to have people over to my house.  Whether it's for a party, dinner, just to hang out, movie night, or whatever I look forward to it so much.

All for several reasons.
1. I love to visit. Ask anyone who knows me and I think they will all answer the same.  I love to talk to people.  My kids hate me going in somewhere to drop something off because it takes me ages to leave, all because I am visiting.
2. I love getting to know new people.  You just never know when you are going to run into a "kindred spirit".  Speaking of kindred spirits I love Ann of Green Gables and totally agree with her and her kindred spirit idea.
3.  I love any excuse to make some new food.  You would think that I would use a tried and true recipe for my visitors, but no! it's a new recipe to see what they think.  Usually it works out but a few times it's been quite a disaster.  Oops!

I made this for some friends the other day. I LOVE chex mixes and I love that you can make them so many ways.  Currently my favorite is the chocolate.  Oh so yummy.  This version definitely didn't let me or my friends down.  We couldn't stay out of it. Crunchy, sweet, and chocolatey.

Chocolate Caramel Crunch

8 cups Chocolate Chex cereal
3/4 cup packed brown sugar
6 tbsp butter
3 tbsp light corn syrup
1/4 tsp baking soda
1/4 cup white vanilla baking chips

1. Pour cereal into a large bowl and set aside. Line a cookie sheet with wax paper and set aside.

2. In a medium microwavable bowl, microwave brown sugar, butter and corn syrup uncovered on high for 2 minutes, stirring after 1 minute, and until completely melted and smooth. Stir in baking soda until dissolved. Pour over Chex. Stir until evenly coated. Spread in an even layer on a cookie sheet. Let cool 10 minutes and break into bite-size pieces.

3. In a small microwavable bowl, microwave vanilla baking chips uncovered on high about 1 minute, stirring after 30 seconds, or until chips can be stirred smooth. Drizzle over Chex. Refrigerate until set. Store in tightly covered container. Enjoy!

White Chocolate Peppermint Chex Mix

Chex Mixes are always a great thing to take to a party.

And there always seems to be a party in December.  Not that I mind.  I love a reason to get together, make something delicious, and enjoy some wonderful company.

This week we have 3 of them.  Sweet!

Three new recipes to try out.  Can't wait.  This was one I was trying out.  I love making chex mixes for several reasons.
1. I can eat them (that's always a plus).
2. I  haven't had one yet that I haven't liked.
3. They are super easy.
4. They are very versatile.
5. You can fit them into any occasion.

Peppermint is a favorite at our house this time of year, so we loved this.  Very subtle, but still completely delicious.  How can it not be when it's covered in sugar!

White Chocolate Peppermint Chex Mix

5 cups Rice Chex cereal
10 ounces melting white chocolate
1 cup crushed candy canes
1 cup powdered sugar

1. Pour cereal into a large bowl.  Melt white chocolate in microwave safe bowl following the package directions.  Pour melted chocolate over cereal, stirring and folding until the cereal is completely covered. Fold in the crushed candy canes.

2. In a large zipped top bag or container with lid, add powdered sugar. Pour the chocolate covered cereal into the bag or container.  Seal the bag or container and shake until all the cereal is coated with the powdered mixture. Discard excess powder and enjoy!

Nutella Almond Buddies

 Hopefully your not sick of family pictures yet cause I just want to give a shout out to the hubs.  We celebrate our 13th wedding anniversary today.  Wow...where does time go, not to mention what does it do to our bodies!  Good thing he still loves me, even after a body that has been filled with 4 children and many, many delicious treats.
 Maybe it's all those treats I make.  Especially ones like these.  Oh my!  

There are just certain foods I have a hard time staying away.  The self control is so not there.  Any kind of chex mix is one of these for me.  

Plus since it's one of the desserts I can eat--the justification is going full steam ahead.  And it doesn't help that it's nutella and so much delicious crunchiness.  That's a perfect snack to this lady!

Nutella Almond Muddy Buddies

9 cups Rice Chex
1 cup almonds, whole, unsalted
1 cup semisweet (or dark chocolate) chocolate chips
1/2 cup plus 2 tbsp Nutella
1/4 cup butter
1 1/2 cups powdered sugar

1.  Measure out the cereal and almonds into a large bowl and set aside.

2.  Pour the powdered sugar in a large ziptop bag and set aside.


3.  Over low (and I mean LOW) heat in a medium saucepan, melt the chocolate chips, the butter, and the nutella together until smooth (if it begins to seize, pull it off the heat immediately and go ahead to the next step even if not completely smooth-- it will still turn out ok).

4.  Pour the chocolate over the cereal and gently stir to coat with a rubber spatula (if chocolate has seized a little, just continue, the powdered sugar will fix everything). This takes a few minutes.  Be patient and keep gently stirring.

5.  Place the coated cereal in the ziptop bag. Seal well and shake to coat with the sugar.  Serve it how you like it, chilled or warm and melty (my favorite!).  Enjoy.

Cinnamon Roll Chex Mix

 Is it already the end of April!!??!!

Seriously, what is happening.

Anyway...this weekend one of my daughters is having a special day.  She is getting baptized, which means we get to have a Paarrrttaaayyy!!!  She is very excited.  

Because it's her special day she gets to pick the menu.  For dessert she wants to have a chex mix bar.  Ahh, a child after my own heart.  

So we have been trying different ones lately to see what she wants.  The "better than sex chex mix" was a hit and this beauty was too.  So far we have scored and of course we have to have the muddy buddies variety.  This version was absolute heaven.

Every single one of us couldn't keep our hands out of the bowl.  We had the whole bowl downed within a day (which I tell myself is great self control since it lasted at least that long!).  This is so delicious and hopefully you might have some stay around long enough to let your friends have some.

Cinnamon Roll Chex Mix

1 1/4 cups brown sugar
1 tsp cinnamon
1/2 cup butter
1/4 cup corn syrup
1/2 tsp baking soda
1 tsp vanilla
1 box Rice Chex or Corn Chex
1/2 cup white chips

1.  Pour cereal into a very large mixing bowl and set aside. Preheat oven to 250°F.

2.  Combine brown sugar, cinnamon, butter, and corn syrup in a saucepan, over medium heat. Bring to a boil, stirring constantly. Remove from heat and stir in soda and vanilla. Pour over cereal and stir lightly till all pieces are coated. Spread onto a greased cookie sheet with sides, the jelly roll size is perfect.

3.  Bake for about 30 minutes, stirring every 10 minutes. Immediately pour onto wax paper to cool. Melt white chips in a glass bowl in the microwave at 50% power, stirring every 30 seconds. Drizzle over cooled Chex mix and enjoy!

Better Than Sex Chex Mix

 I love all sorts of Chex mixes.  I love that they are sweet but crunchy or salty but crunchy or a little spicy but crunchy.  

So when I saw this deliciousness I knew it had to go on my list, especially with that title.

The funny thing is that my kids asked me what it was called and so to them it's "Better Than Anything Chex Mix".  I just wasn't ready to have that discussion with them at the party we took this to.

Anyway...this chex mix is some of the best that I  have had.  It ALMOSTS beats out muddy buddies, almost!  But how could you go wrong with reese's peanut butter cups, chocolate, white chocolate, marshmallows (don't be tempted to leave those out--I am not a fan of marshmallows and they were awesome in this), caramel, and more caramel.  This was amazing, but just make sure you have some place to take it because you just might eat the whole bowl!

Better Than Sex Chex Mix

8 cups Rice Chex cereal (you can also use the chocolate variety)
3/4 cup packed brown sugar
6 tbsp butter
3 tbsp Light Corn Syrup
1/4 tsp baking soda
1 cup MINI Reese's Peanut Butter Cups
1 cup mini marshmallows
1/2 cup caramel bits (if you can't find those 12 regular caramels work too)
1 tbsp heavy cream
3/4 cup milk chocolate chips
1/2 cup white chocolate chips
1 tsp coarse sea salt.

1.  Pour measured cereal into a large microwaveable bowl. Set aside.

2.  Line cookie sheet with waxed paper or foil and set aside.

3.  In a small microwaveable bowl, heat brown sugar, butter and corn syrup uncovered on high for 1-2 minutes, stirring after 1 minute, until melted and smooth.  Stir in baking soda until dissolved.  Pour caramel mixture over cereal, stirring until evenly coated.  Place bowl in microwave and microwave on high for 3 minutes, stirring after every minute.  Spread on lined cookie sheet.  Cool 10 minutes and then break into bite-sized pieces.

3.  After the Chex mixture is cool to the touch, evenly sprinkle mini peanut butter cups candy and mini marshmallows over the Chex mixture.

4.  In a small microwaveable bowl, microwave caramel baking bits and cream uncovered on high for 1 minute or until chips can be stirred smooth.  Use a spoon or fork to drizzle over Chex mixture.   Repeat with milk chocolate baking chips and again with the white baking chips.  Quickly sprinkle coarse salt over all the chex mixture while candy drizzles are still wet.  Don't skip the salt it's totally worth it!

5.  Refrigerate until set. Break apart and store in tightly covered container.  Enjoy!

Muddy Buddies

  This is one of my kids favorite snacks (okay mine too if I have to admit it) and it is so fast and easy.

9 c. Rice Chex cereal
1 c. semi-sweet chocolate chips
1/2 c. peanut butter
1/4 c. butter
1 t. vanilla
1 1/2 c. powdered sugar.

*  Put cereal in a large bowl.  In a medium, microwaveable bowl melt chocolate chips, peanut butter and butter until smooth, about 1 1/2  minutes, stirring every 30 seconds.  Add vanilla and mix well.  Pour over cereal and stir until well coated.  Add powdered sugar and stir again until well coated.  Eat and enjoy!
