Orange Cookies

I LOVE fruit!!

Especially citrus fruit this time of the year! Oranges are my favorite, especially right off the tree.  I didn't know oranges could taste so different.  In Idaho we don't get to experience that goodness except when good friends bring them back for us--yummy!!!  Then if you combine that delightful goodness with cookies...HEAVEN!! 

This cookies is absolutely delicious.  It reminds me a little bit of the Lemon Drop Cookies that I also love (and won an award in our local paper for).  These are so light and fluffy and the orange glaze completely puts it over the top!  

1 1/2 c. sugar
1 c. shortening
2 eggs, beaten
1 c. sour cream
2 T. grated orange rind
3 T. orange juice
4 c. plus 2 T. flour
1 T. baking powder
1 t. baking soda
1/4 t. salt

Orange Glaze

1 lb. powdered sugar
1 T. grated orange rind
3 T.  orange juice
1 t. vanilla extract


1. Preheat oven to 375 degrees.  Combine sugar, shortening, eggs and sour cream in a large bowl; beat until smooth and creamy.  Add orange rind and juice; beat well.

2.  In a separate medium bowl combine flour, baking powder, soda, and salt with a whisk; gradually add to creamed mixture, beating well.  Drop cookie dough onto greased cookie sheets.  Bake for 11-13 minutes or until edges just begin to brown.  Cool on wire racks. 

3.  For glaze, combine all ingredients; beat until smooth.  Add more orange juice if needed to thin or more powdered sugar to thicken.  Spread on cooled cookies and enjoy, they are delicious!!
